There is something undeniably magical about Bol Renversé. Maybe that's why it's also called Magic Bowl, to think of it. It’s wholesome, deeply comforting, and it packs that ultimate "wow factor" at the dinner table: you lift the bowl to uncover a stunning, tiered dome of fluffy rice, savory stir-fry, tender protein, and a glorious fried egg sitting right on top.
Making this with my son on Tuesday reminded me of why this dish holds such a special place in my heart. Growing up in Mauritius, coming home famished after long days of school and after-school tuition, nothing beat the feeling of knowing my mum had made a special Bol Renversé just for me. There is truly nothing quite like walking through the door to a meal made with love.

Whether you're cooking for family or showing off for friends, here is how you can recreate this Mauritian masterpiece at home.
Ingredients You’ll Need To Make This For Four
- Rice: 2 cups
- Proteins: 2 chicken breasts (diced) and 1 small tray (~150g) of King prawns
- Vegetables & Aromatics:
- 2 pak chois
- 2 small packs of baby corn
- ~6 large shiitake mushrooms (soaked, reserving the water)
- 1 decent-sized carrot
- ~6 cloves of garlic
- Spring onions (chopped, for finishing)
- Sauce & Seasoning: 2 tablespoons oyster sauce, soy sauce to taste, fish sauce (optional), cornflour, rapeseed oil, and a dash of cracked black pepper.
- The Magic Touches: Eggs (one per serving, fried with a runny yolk) and your favorite chili paste – I love pairing mine with piment confit from Rodrigues.
Step-by-Step Method
1. Get the Rice Going
Start by putting your rice on to cook. I swear by my Nutribullet rice cooker – it takes about 40 minutes and is hands-down the easiest, foolproof way to get perfectly fluffy rice every single time without fail (ad).

2. Prep the Veg & Proteins
While the rice cooks, get your chopping station ready:
- Use a peeler to create very thin slices of carrot. Throwing these in right at the end ensures you retain that lovely crunch rather than ending up with soggy carrots.
- Slice your rehydrated shiitake mushrooms.
- Mince your garlic effortlessly using the Joie String Pull Chopper – it saves so much time and gives you an even, fine mince (ad).
- Dice your chicken breasts and prep your King prawns.
3. Cook the Proteins
- Chicken: Heat a bit of rapeseed oil in a pan, fry off some of the minced garlic, and add your chicken. Season generously with an umami salt-and-pepper blend, then toss in a splash of fish sauce, soy sauce, and oyster sauce. Let it fry until nicely done and set aside.
- Prawns: In a clean pan with a bit of oil, garlic, and soy sauce, flash-fry your King prawns for about three minutes. Tip: Don't overcook them, or you'll lose that tender texture!
4. Toss the Veg Stir-Fry
In a big wok, sauté more garlic alongside your baby corn, pak choi, and sliced shiitake mushrooms. To create a rich, savory sauce, mix some cornflour with the reserved water from soaking your mushrooms and a splash of soy sauce. Pour this mixture into the wok, add a little extra water to reach your desired consistency, let it thicken up, and toss in your crisp carrot ribbons and chopped spring onions right at the end.

5. Fry the Eggs
In a separate pan, fry your eggs. You want a runny yolk with the edges nicely sealed.
6. The Great Reveal (Layering)
This is where the fun begins. Grab a deep bowl and build your layers from the bottom up:
- Place your fried egg right at the bottom.
- Add your protein of choice (chicken, prawns, or both).
- Add a generous heap of your vegetable stir-fry.
- Top it off with the rice, pressing it down gently and sprinkling a bit of cracked black pepper for an extra flavor kick.
- Place your dinner plate on top of the bowl, flip the whole thing upside down in one swift motion, and carefully lift the bowl to reveal your masterpiece!
Chef's Hack: Revamping Leftovers into Crispy Tofu Bol Renversé
If you end up with leftovers (which is a wonderful problem to have), you can easily reinvent the dish the next day. Chop up some firm tofu into small pieces, coat them in cornflour, garlic granules, and a generous pinch of umami seasoning, then shallow-fry them in a pan. You’ll get the crispiest, most flavorful umami tofu bites to use as your protein for a vegetarian version the next night!
